PRESSURE COOKER TIPS AND RECIPES

For around 6 to 7,000 feet, you should add at least 20% cooking time. Actually, slightly over 20% works best. Here are some cooking times and recipes I've come up with.

I have an electric 7 in1 Farberware 8 quart pressure cooker. All my instructions will be for that, you'll have to figure out your equivalent menu setting on your brand.

Recipes below for:
Mashed Potatoes
Center Back Beef Ribs
Corned Beef and Cabbage

Mashed Potatoes
You don't have to peel the potatoes, just scrub with brush, rinse occasionally to clean. I usually do peel mine first, they cool too much while I'm getting the skins off. Put in SALTED FILTERED water in pressure cooker if you have hard water. Have the filtered water at least half way up the potatoes. I'm saying use filtered water because most water in high altitude areas I've lived in had very hard water. Takes things forever to cook in hard water.

Set pressure cooker to 07 Vegetable Steam and set TIME COOK to 20 minutes. So far, every time I've done this, potatoes are falling apart! I scoop them out one at a time in a bowl. If you didn't peel them, hold them still with a fork and use a knife, table or sharp, doesn't matter to just scrape the skin off. If you are fine with the skins, then just leave them on.

I put mine in my KitchenAid Artisan Mixer with the regular beater, add butter, a little milk, salt  and pepper and beat. I add the milk after I get the butter melted so that I don't make the potatoes runny.

Center Back Beef Ribs

2-1/2 to 3 pounds of center back beef ribs
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon onion powder or sprinkle good amount of onion flakes
1 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons olive oil

Put P9 SEAR on the pressure cooker 30 to 40 minutes. Olive oil in the pan, put the ribs in, sprinkle the above on the ribs. Turn several times to get brown on all sides.

1 cup beer, flavored beers are great
12 ounces bbq sauce

Put pressure cooker on P5 Steak/Meat for 55 minutes.

Corned Beef and Cabbage
2-1/2 pounds Corned Beef
4 cups chicken broth
3 or more medium cubed or several small potatoes left whole with skins on
3 carrots
1 small or medium cabbage cut in at least 8 pieces
Garlic Powder

Sprinkle contents of corned beef spice packet over meat, then sprinkle some garlic powder on top of the meat. Arrange the potatoes, carrots and cabbage in the pot. Add chicken broth.

Cook 2 hours on P5 Steak/Meat

Chuck Shoulder Roast
